Calle 23 is the brainchild of French-born biochemist Sophie Decobecq. She sources her agave's from the highlands of Jalisco between the town of Tepatitlan and Arandas. She double distills each expression seperately. Using her science background, she has perfected the art of tequila production, with a huge emphasis on the yeast that is used during fermentation.
