Bozal Pechuga Mezcal (750ml / 45.5%)

Pechuga mezcal is traditionally produced by family for family. It is also ways small batch and we are very lucky to have secured this limited release. Organic chicken is marinated with local fruits, chiles, citrus, raisins, cinnamon and clove. It is then added to the third and final distillation to produce what some say is the most magnificent of mezcals. A ritual among the last four generations, the recipe has remained the same over the years to keep with the family tradition. 

AROMA: The Pechuga expresses a delicate balance in which the smokiness is softened noticeably by the protein and wild fruit.
TASTE: A rich mouthfeel offers flavors of roasted fruit, subtle minerality and a slight  smokiness, finishing dry on the back of the palate.
ENJOY: Let this one open up in the glass for a few minutes. The difference is well worth it.
