Bozal Sacatoro Mezcal (750ml / 44.8%)
Bozal Sacatoro is made with agave Sacatoro and is produced using the most traditional of methods. After the pinas are cooked in earthen pits they are crushed by a horse drawn tahona wheel imparting some of the soul of the palenque from where it is produced. This method adds subtle notes that are not possible using more modern methods.
TASTE: An initially viscous mouthfeel leads to a savory palate with flavours of sage, fennel and creamed corn. The finish is lasting with a brined salinity and effervescence.
ENJOY: Let this one open up in the glass for a few minutes. The difference is well worth it.
