Two unique aspects of Tierra Noble which make it the perfect tequila are at these high altitudes, the air is cool and crisp which causes a much slower fermentation resulting in a musto with well developed flavours (using exclusively Montpelier wine yeast) and a secondary fermentation, usually only seen in chardonnay production, which produces beautiful buttery notes in the final product.
